Dark green vegetables such as watercress, mustard greens, kale, spinach, broccoli, bok choy, Brussels sprouts, arugula, microgreens, dandelion greens, are packed with fiber, vitamins A, C, B-vitamins, E and K. They are rich in carotenoids-antioxidants, folate, calcium, iron, magnesium.
